Episode 11 - Oaxacan Piedrazo Salad
September. 09,2023

In Spanish, a piedrazo translates to a "blow given with a stone," so the name itself serves as a warning. In this Spanish dish, 'the rock' is the chunk of hard bread, while the vinegar, chile, and salt are 'the blow' to your senses.

Episode 12 - Potato-Chorizo Tacos
September. 16,2023

These tacos are down-right delicious. And you can make them in a flash. The best versions of these tacos that Rick has ever tasted are from street vendors, where they have the potato-chorizo mixture browning on the side of the griddle.

Episode 13 - Queso Fundido
September. 23,2023

Queso fundido is, literally, melted cheese. That is, cheese put into an earthenware dish and melted beside, or over, a bed of coals. For this recipe, Rick took a page out of the fondue playbook and added a little beer to the mix.

Episode 14 - Roasted Tomatillo Salsa

Episode 16 - Sopa Seca de Fideo
October. 14,2023

While Rick admits there is something thoroughly craveable about a traditional fideo seco dish, this version gives it a run for its money. That said, crispy chorizo, diced avocado, and anejo cheese would not be at all out of place here.

Episode 17 - Tinga Poblana
October. 21,2023

Rich in roasted tomatoes, browned meat, and smoky chipotle chiles, this is one of Rick's favorite dishes. In colonial Puebla, tinga is offered as a stew (what we will make here), a torta, and stuffing for masa turnovers.

Episode 18 - Torta de Elote
October. 28,2023

Due to its buttery richness, Rick always serves this dish warm from the oven, or after giving it some heat in the microwave or low oven. Serving it warm is the best way to thoroughly indulge in the torta's moist tenderness.

Whenever Rick arrives in Mexico City, he always makes a beeline straight to Contramar, Gabriela Camara's groundbreaking seafood restaurant, for a long, leisurely lunch that always includes the restaurant's famous Tuna Tostada.

Paula's Home Cooking
Paula's Home Cooking
Paula's Home Cooking is a Food Network show hosted by Paula Deen. Deen's primary culinary focus was Southern cuisine and familiar comfort food that is popular with Americans. In the show, classic dishes such as pot roast, fried okra, fried chicken and pecan pie were the norm, and overly complicated or eccentric recipes were usually eschewed. Dishes that are flavorful and familiar were spotlighted, although the fat content and calorie count of the meals were often very high. Paula also showed off vignettes of Savannah, Georgia, where she co-owns with her sons Jamie and Bobby, The Lady & Sons. Deen's popularity, spurred by the show, led to a small role in the feature film Elizabethtown. Despite its seemingly Southern atmosphere, Paula's Home Cooking was taped in upstate New York until 2006; since then, shows had been taped at Deen's new home near Savannah. In 2008, Deen began work on a revamped version of the series called Paula's Best Dishes, in which friends and family join her in the kitchen to prepare recipes. Deen's sons often appeared as guests on the show. They too proved to be popular among Food Network's audience and now have their own show, Road Tasted, similar to Rachael Ray's Tasty Travels. Deen's husband, Michael Groover, also appeared sporadically as a guest, and Food Network taped the Deen-Groover wedding in 2004 as a special edition of the show. The success of Paula's Home Cooking led to a line of cookbooks, a magazine, other television shows and specials, and related merchandise. Reruns of the show now air on Food Network's sister channel GAC.
